Pancakes with a punch, kickstart your day with our superfood pancakes

Pancakes are a breakfast classic, loved by many for their warm and comforting flavour and texture. Whether enjoyed on lazy weekends or busy weekday mornings, pancakes have a way of bringing joy to the table.

In this post, we will share a simple yet delicious recipe for one-bowl fluffy pancakes made with just one egg, one cup of flour, and one cup of milk that can be made in 10minutes on a weekend or a weekday. Pair these pancakes with Symbeeosis’ Organic Functional Honeys or Functional Marmalades for added nutrition and flavour, creating a breakfast that’s both satisfying and nourishing for you and your family.

Prep time: 5 minutes, Cook time: 15 minutes.

Ingredients:

– 1 egg

– 1 cup All-purpose flour/ Whole Wheat flour or Oat-flour

– 1 cup Milk (dairy or plant-based)

– ½ tsp Baking Powder

– Pinch of Salt

Recommended Toppings:

Instructions:

1. In a mixing bowl, crack the egg and beat lightly with a fork, (or add the flax egg for a vegan option).

2. In the same bowl, add your Flour of choice, Baking Powder, Salt and Milk of choice. Mix until the batter is smooth and free of lumps.

3. Heat a non-stick skillet or griddle over medium heat and lightly grease with butter, a neutral oil or cooking spray.

4. Once the skillet is hot, pour a ladleful of pancake batter onto the surface. Cook until bubbles begin to form on the surface of the pancake and the edges start to look set, about 2-3 minutes.

5. Carefully flip the pancake with a spatula and cook for an additional 1-2 minutes, or until golden brown and cooked through.

6. Store the pancakes in a warm oven on a baking tray until ready to serve, while you repeat the process with the remaining batter, greasing the skillet as needed between batches.

7. Serve the pancakes warm with a drizzle of any of Symbeeosis’ Functional Honeys or a dollop of Symbeeosis’ Organic Functional Marmalades.

Additional note: These pancakes can easily be made vegan by using a flax egg (combine one tablespoon of flaxseed meal and three tablespoons of water and allow to sit for 5 minutes until it forms into a gel), in place of the real egg, plant milk instead of dairy milk and opting for one of our Functional Marmalades as toppings.
