The thyme plant (Thymbra capitata) is a small aromatic, Mediterranean shrub. To cope with adverse conditions, thyme produces fragrances and many other important protective substances, useful not only for the plant, but also for us!  Crete is full of this plant, which thrives on the island and is thus the best ground for bees to produce an excellent quality honey. Our Cretan Thyme honey is collected from beehives in isolated locations at an altitude of 1100 meters on the Omalos plateau.
