All this gives Cretan honey, a confirmed nutritional value. It has a high degree of more valuable ingredients, such as polyphenols, phenolic acids, and a unique monoterpene, and antioxidant, antimicrobial, and healing action, while at the same time stimulating the immune system and helping us to protect against colds. The Cretan thyme honey is unique in the world due to the particularity of Crete, which with the rich endemic flora and the sea that surrounds the island, gives the honey a special sweet taste, distinct aroma, amber color, and fine fluid texture. Thyme honey has a high concentration of fructose and although it is a flower honey, it is quite resistant to sugaring and crystallizes within 6 to 18 months.

Origin
The thyme plant (Thymbra capitata) is a small, aromatic, Mediterranean shrub. To cope with adverse conditions, thyme produces aromas and many other important protective substances, useful not only for the plant but also for us! Crete is full of this plant, which grows in the dry climate of the island and is thus the best soil for bees to produce excellent quality, honey. Our Cretan thyme honey is collected from beehives at an altitude of 1100 meters on the Omalos plateau, in isolated locations away from pollutants, thus ensuring the purity of the raw material.
