Heather honey tends to crystallize quickly (1-3 months), as is the case with all organic honeys. You can restore its texture by heating it at low temperatures in the oven or in a bain-marie

Origin
Our beehives are placed in the Cycladic island mountains, where heather thrives – a beautiful little shrub that blooms in autumn. The Cyclades, a place of unparalleled natural beauty, are like a miniature of Greece, with high mountains full of ravines, small rivers, running waters and thermal springs, valleys planted with vines, cypresses, oaks, fruit trees and olive trees. A study in contrasts, the Cycladic islands combine arid landscapes with lush vegetation and plentiful waters, surrounded by the azure Aegean Sea. In this unique environment heather blooms from early autumn to late winter. Its flowers are a real feast of colors with pink, purple and white hues. Heather is an excellent beekeeping plant – there is a typical phrase by Dioskourides about bees that harvest heather, “they produce excellent honey”.

Oatmeal cookies with honey
Ingredients:
300 g oats, 1 banana, 2 tsp honey, 20 g olive oil, 150 g dried nuts of your choice, juice from 1 orange, 1 tsp baking powder, cinnamon
Method:
In a bowl, mash the banana, then add the honey and olive oil and mix together. Add the baking soda, salt, baking powder, and cinnamon and stir. Slowly add the oats and orange juice and once the mixture is homogenized add the nuts. Roll into small balls, then press down with the heel of your palm to flatten them evenly. Bake in a preheated oven at 180°C for 10-12 minutes.
