Known since antiquity as a natural remedy for various illnesses, heather honey has been winning devotees all over the world. With its exceptional antioxidant and tonic properties, it offers multiple health benefits and has very low impact on blood sugar. Thanks to its high content in trace elements and pollen, it is a food with high biological value for humans – and for bees, who favor heather among many other herbs and wildflowers, because they are attracted by its scent. Heather honey tends to crystallize quickly (1-3 months), as is the case with all organic honeys. You can restore its texture by heating it at low temperatures in the oven or in a bain-marie
Our beehives are placed in the Cycladic island mountains, where heather thrives – a beautiful little shrub that blooms in autumn. The Cyclades, a place of unparalleled natural beauty, are like a miniature of Greece, with high mountains full of ravines, small rivers, running waters and thermal springs, valleys planted with vines, cypresses, oaks, fruit trees and olive trees. A study in contrasts, the Cycladic islands combine arid landscapes with lush vegetation and plentiful waters, surrounded by the azure Aegean Sea. In this unique environment heather blooms from early autumn to late winter. Its flowers are a real feast of colors with pink, purple and white hues. Heather is an excellent beekeeping plant – there is a typical phrase by Dioskourides about bees that harvest heather, “they produce excellent honey”.
