The thyme plant (Thymbra capitata) is a small aromatic, Mediterranean shrub. To cope with adverse conditions, thyme produces fragrances and many other important protective substances, useful not only for the plant, but also for us. At Symbeeosis we collect thyme honey from the thyme-filled hills of Andros as thyme is an emblematic herb of the island. The arid landscape of Andros enhances the aromatic and flavorful characteristics of the honey. Our beehives are placed in areas with native herbaceous vegetation (or organic crops) necessary for the proper nutrition of the bee. At the same time, we ensure high bioactivity of honey by applying beekeeping practices that meet the highest standards of sustainable and environmentally friendly processes.
