Thyme is a small, aromatic, bee-friendly Mediterranean shrub. It belongs to a group of plants known as phrygana, which have adapted to the dry and hot Greek summer by shedding or reducing their leaves to limit water loss. As part of this adaptation, thyme produces aromatic compounds and other important protective substances that are beneficial not only to the plant itself, but also to the human body. It is highly valued by bees and produces exceptional honey.

The specific thyme variety we have selected, Thymbra capitata, is considered one of the most aromatic. It can be enjoyed as an herbal infusion thanks to its soothing properties, either on its own or blended with other herbs. It is also widely known as a culinary herb, adding aroma and flavor to meat and poultry dishes.
